Our Blue Lobster

Morning all,

Just been going through my photos and I came across this one of our blue lobster. When we bought him a few months back he was only a few centimetres long, now he has trebled in size. This photo isnt even the most recent photo of him, as he has since shed his skin again and got even bigger.

I refuse to my hand in the tank now in case he nips my fingers or hand...lol

Receipes for syn free muffins and syn free quiche

Morning all,

I have just come on to check my blog and I have had a request from A Slimmers Dream to post the receipes for the syn free Muffins on my blog. So here it is.

Recipe makes 12

225g fine ground polenta
1 large beaten egg
1 tsp bicarbonate of soda
3 pots of vanilla mullerlight low fat yoghurt
7 - 10 tbsps Splenda
1 - 2 tsps vanilla extract

1. Put all ingredients in a bowl and mix for at least 3 minutes. Leave to stand for at least 20 minutes.
2. Spoon into muffin tins that have been sprayed with frylight.
3. Cook for about 20 minutes at 200C / Gas mark 6

Variations -
cherry yoghurt and replace vanilla extract with almond.
vanilla & chocolate yoghurt with rind and juice of 1 orange with 1 tsp vanilla.

I pinched this from the minimins website.

For the quiche i followed the receipe I posted here. Oops just noticed I didnt actually put the receipe just the ingredients.

Ok, Syn free quiche

3 Eggs
227g low fat natural cottage cheese
Mixed herbs
HEXA allowance of cheese (I use the low fat cheese as you are allowed more of that..he he)
Bacon

Mix in a bowl the 3 eggs, cottage cheese and mixed herbs.
chop up the bacon and fry to cook through (i use frylight for this)make sure getting rid of all the fat.
add the bacon to the cottage cheese mixture and mix well.
add the cheese (you can add it all now, or save some to sprinkle on top of quiche 5 mins before take out of oven.
mix well.
pour into quiche dish, or for individual ones i used a muffin tray.
put in oven on gas mark 6 for an hour or until cooked.

these are fab with the cheese in, you dont have to put bacon in, i have done them with ham and red pepper and that is lovely. At class i tried salmon and broccali i wasnt over keen on that, but each to there own.

Syn free Muffins, and syn free quiche

Good afternoon,

Just came across these photos of the syn freemuffins and individual syn free quiches i made a few weeks back.

The muffins were cherry and almond, and the quiches were bacon and cheese.

They were both absolutly yummy. :)
